Green Bean Stew with Beef

You won't believe such a dish could be so good with so few ingredients, but it's the key when it comes to green beans recipes of the Turkish cuisine.  Although not quite favorable as its vegetarian version simmered in olive oil, green bean stew with beef provides a warm getaway from cold olive oil summer dishes of Turkish cuisine. Fresh green beans and ripe tomatoes picked from the farmer's market, cooked with lamb or beef, and served with white buttery rice and yogurt makes a strong case against any style of bean dish. Here is the recipe:

Green Bean Stew with Beef

Green Bean Stew with Beef

Ingredients:
-(Must) 3 tbsp olive oil

-(Must) 2 onions, chopped
-(Must) 8 oz. (1/2 lbs or 1/4 kg) cubed beef (alternatively you may use lamb)
-(Must) 2 tomatoes, peeled and chopped
-(Optional) 1/2 tbsp pepper paste
-(Must) 3 cup plus 2 cup hot water
-(Must) 2 lbs (or 1 kg)  fresh green beans, ends removed and sliced in half
-(Optional) 1 green bell pepper, seeded and chopped
-(Optional) 1/2 tsp salt, pepper


Directions:


In a medium skillet, heat olive oil over medium heat. Sauté onions until slightly brown on edges. Add cubed meat and cook for 7 to 10 minutes longer. Add pepper paste and saute about 3 more minutes. Add tomatoes and 3 cups hot water. Lower heat to a simmer. Cook until meat is tender, or about 30 minutes.

Stir in beans and green pepper and cook for 10 minutes over medium heat. Add 2 cups of hot water and simmer until vegetables are tenderAdd salt and pepper to taste. Serve with rice and greek yogurt.
