Yogurt Soup

Yogurt soup is one the basic soups of Turkish cuisine. Its a filling soup with low calorie and since it contains dairy products its very healthy. Here is the recipe:

Yogurt Soup


Yogurt Soup
Origin: Turkish
Difficulty: Easy


Ingredients:
-(Must) 1 cup plain yogurt

-(Must) 1 egg 
-(Must) 1 tbsp all-purpose flour
-(Must) 1/2 cup rice or orzo, if you use rice, rinse well 
-(Must) 5 cup water
-(Must) 2 tbsp butter
-(Must) 1 tbsp dried mint
-(Optional) Salt, pepper

Directions: 

Scramble the egg in a bowl, add yogurt and flour. Mix them well, you would better use a blender. Cook rice in 5 cups of water for 15 minutes. Pour the mixture into boiling rice and then quickly rinse. Rinse well until it starts to boil again. Cook for 3 more minutes.

In a pan, melt butter and add mints when butter is hot. Fry them for 30 second. Pour the sauce into bowl, add salt and pepper and gently mix. Serve hot, with fresh mints and newly baked bread.

Chicken Red Lentil Soup

Lentils were unearthed in the Paleolithic layers of Franchthi Cave in Greece (9,500 to 13,000 years ago), in the end-Mesolithic in Syria, and sites dating to 8000 BC in the area of Jericho. The ancient Greeks were lovers of lentil soup, as attested to by a comment by Aristophanes: "You, who dare insult lentil soup, sweetest of delicacies." Lentil soup is mentioned in the Bible: In Genesis 25:30-34, Esau is prepared to give up his birthright for a pot of fragrant red lentil soup (a "mess of pottage" in some versions) being cooked by his brother, Jacob.

This is a recipe from Turkey, right in the middle of Greece and Syria, where is the native land of lentil foods.

Chicken Red Lentil Soup



Chicken Red Lentil Soup
Origin: Turkish, Middle East
Difficulty: Easy

Ingredients:

-(Must) 1 chicken breast, diced
-(Must) 1 cup red/yellow/orange lentil, very but really very well washed
-(Optional) 1 large onion, chopped
-(Optional) 1 small potato, chopped
-(Optional) Salt, pepper
-(Optional) 2 tsp cumin
-(Optional) 3 tbsp butter

Directions:

In a large pot, combine all ingredients but save butter for later. Add more or less 2 liter (9 cups) water. Turn the heat on and cook about 1.5 hour in low heat. Be careful it may be overflow, if you shut the lid completely. 5 minutes before you remove it from stove add butter. After it's cooked and became tepid, you should smash the soup by a hand blender nicely. Serve hot, bon appetit!

Chicken Orzo Soup

Soups made with chicken and orzo is one of the basic soups of Turkish Cuisine. The soup has very deep root in the culture and was very common in Ottoman Palace Kitchen. It's believed that this soup is best to serve someone who has flu or cold. Here is the recipe:

Chicken Orzo Soup



Chicken Orzo Soup
Origin: Turkish, Greek
Difficulty: Very Easy

Ingredients:
-(Must) 1 Chicken breast
-(Must) 1 Onion, finely chopped
-(Must) 1 Cup Orzo
-(Optional) 2 Fresh green or red pepper, finely chopped
-(Must) 1 tomato, finely chopped
-(Must) 1 tbsp tomato paste
-(Optional) 1/2 lemon juice
-(Must) 1 tbsp butter
-(Optional) Salt, Pepper
-(Optional) Fresh Peppermint and parsley, chopped

Directions:
Boil chicken breast in 10 cups water. When chicken is cooked, remove chicken from broth, shred and add back to broth. Be cautious, if it's hot.  

To prepare the gravy, in a pan fry onion and pepper with butter until onions are browned. Than add tomato paste and scorch 2 more minutes. Finally add tomato and cook for 5 minutes in medium-low heat.

When your gravy is cooked, add it to broth and turn the heat on. When soup starts to boil add orzo, salt and pepper to soup and keep boiling for 15 more minutes. Then, add lemon juice, parsley and peppermint and turn off the heat. Bon appetit!
