Mediterranean Pasta Salad

Since it's the beginning of the summer, I want share a salad recipe that welcomes summer!

Mediterranean Pasta Salad

Mediterranean Pasta Salad
Origin: Turkish, Italian
Difficulty: Easy

Ingredients: 
-(Must) 1 packet spaghetti / for a lighter option you may use wholewheat pasta
-(Optional) 2 cups broccoli
-(Optional) 2 cups mushrooms
-(Optional) 2 cups cherry tomatoes
-(Optional) 1 cup parsley
-(Optional) 2 clove of garlic
-(Optional) 1 small onion
-(Optional) 1 lemon
-(Optional) 2 tbsp pine nuts
-(Optional) 6 tbsp olive oil / for a lighter option you may decrease amount of oil
-(Must) 1 tbsp butter
-(Optional) Salt, pepper

Saute pine nuts in a small pan. 

Add salt and olive oil to boiling water in a large pan. Add broccoli and cook for 6-7 minutes. Remove broccoli from water and add spaghetti to same water and cook as much as you like.      
Slice cherry tomatoes to 2-4 pieces. I a pan saute onion mushrooms and garlic with butter. When they are browned turn off the heat. Add parsley, lemon juice,tomatoes and broccoli. Spice with salt and pepper. Combine with pasta. Decorate with pine nuts. Serve warm.
