Ingredients:
-(Must) 1 Chicken breast
-(Must) 1 Onion, finely chopped
-(Must) 1 Cup Orzo
-(Optional) 2 Fresh green or red pepper, finely chopped
-(Must) 1 tomato, finely chopped
-(Must) 1 tbsp tomato paste
-(Optional) 1/2 lemon juice
-(Must) 1 tbsp butter
-(Optional) Salt, Pepper
-(Optional) Fresh Peppermint and parsley, chopped
Directions:
Boil chicken breast in 10 cups water. When chicken is cooked, remove chicken from broth, shred and add back to broth. Be cautious, if it's hot.
To prepare the gravy, in a pan fry onion and pepper with butter until onions are browned. Than add tomato paste and scorch 2 more minutes. Finally add tomato and cook for 5 minutes in medium-low heat.
When your gravy is cooked, add it to broth and turn the heat on. When soup starts to boil add orzo, salt and pepper to soup and keep boiling for 15 more minutes. Then, add lemon juice, parsley and peppermint and turn off the heat. Bon appetit!
