Shish Kebab

 Famous Turkish shish kebab is small cubes of any kind of meat, fowl or fish with or without vegetables that are skewered on a wooden or metal stick and roasted in an oven or over an open fire. Here is a nice recipe:

Shish Kebab
Origin: Turkish
Difficulty: Easy

Ingredients:

-(Must) 2x2 cm diced lamb (1 kg or equivalently 2 Ibs)
-(Optional) 2 tomatoes, diced
-(Optional) 4 green peppers, diced
-(Optional) 1 tsp thyme
-(Optional) 10 drops lemon juice
-(Optional) 1/3 cup olive oil
-(Optional) 2 red onion
-(Optional) Salt, Pepper

Directions:

Mix the marinade ingredients together in a bowl and add the meat. Cover and chill in the fridge for at least 30 minutes, preferably several hours or even overnight. 
Taking care not to poke yourself, thread the meat and vegetables onto skewers. One way to do this safely is to put the piece that you are trying to pierce on a cutting board, and then push the skewers through the piece to the board. Keep threading one meat one vegetable and then one more meat... If you keep a little space between the pieces, they will grill more evenly. Paint the kebabs with some of the remaining marinade.

Shish Kebab
Prepare your grill for high, direct heat. Grill for 8 to 10 minutes. Let rest for 5 minutes before serving.
