Green Bean Stew with Beef |

Ingredients:
-(Must) 3 tbsp olive oil
-(Must) 2 onions, chopped
-(Must) 8 oz. (1/2 lbs or 1/4 kg) cubed beef (alternatively you may use lamb)
-(Must) 2 tomatoes, peeled and chopped
-(Optional) 1/2 tbsp pepper paste
-(Must) 3 cup plus 2 cup hot water
-(Must) 2 lbs (or 1 kg) fresh green beans, ends removed and sliced in half
-(Optional) 1 green bell pepper, seeded and chopped
-(Optional) 1/2 tsp salt, pepper
Directions:
In a medium skillet, heat olive oil over medium heat. Sauté onions until slightly brown on edges. Add cubed meat and cook for 7 to 10 minutes longer. Add pepper paste and saute about 3 more minutes. Add tomatoes and 3 cups hot water. Lower heat to a simmer. Cook until meat is tender, or about 30 minutes.
Stir in beans and green pepper and cook for 10 minutes over medium heat. Add 2 cups of hot water and simmer until vegetables are tender. Add salt and pepper to taste. Serve with rice and greek yogurt.
